Here is an example of the chemistry and math used to calculate the SAP number for any oil or fat from its fatty acid line-up.

Chemical calculations are done on the basis of weight because we can calculate the number of atoms or molecules in an amount of any substance from the weight. The molecular weight of any chemical is the sum of the atomic weights of all its constituent atoms. The weight of an atom is the weight of it's constituent protons, neutrons and electrons. Here are the molecular weights we will need in our calculations:

hydrogen = H = 1
carbon = C = 12
oxygen = O = 16
sodium = Na = 23

Now we're on a roll! From the saponification reaction we know that one mole of fat needs three moles of lye to saponify it. From above we have lye's molecular weight as 40, so 3 x 40 = 120. Let's calculate our SAP number now:

3 moles of lye saponifies one mole of fat

That's 120 / 894.2732 = 0.134187 = 0.134

We look up avocado oil in SoapCalc and we see that it has a SAP of ... 0.133! Voilà! :)
